The wine is fermented in stainless steel and spends 12 months on its fine lees, gaining richness, mouthfeel and complexity. The wine itself is rich, but taut with vibrant minerality combined with flavours of lemongrass, ripe white peaches, delicate fresh herbs with a long persistent finish.
