This delicious Piedmontese Cotechino is a large, rich Italian pork sausage made with an equal amount of rind and fat as lean meat combined with spices and herbs. Usually, you cook it by boiling and serving in slices with lentils. This version is already cooked, so just heat up to serve.


Cooking Instructions: Dip the sealed bag in water, bring to the boil, cook over low heat for 20 minutes. Remove the bag from the pot and cut the top corner of the bag, drain the gelatin. Open the bag completely, remove the Cotechino and serve already cut on a hot plate.
