As soon as the grapes arrive in the cellar, they, and the resulting must, have theleast contact with oxygen possible. The pressing cycles are chosen to allow for agentle extraction of the must. Alcoholic fermentation takes place in steel vats with15% in French oak barriques to add subtle complexity, all at controlled temperatures.At the end of the production process, Pomino Bianco is aged in the bottle for a fewmonths prior to release.
